So I promise I'll be better about this!

Yeah, yeah.. I know I haven't posted for 6 or 7 months... but that doesn't mean that I've forgotten about my blog entirely! So Donour and I moved to Albuquerque in August, and this week I've started selling cars at Galles & Davis Subaru. I sold my first car yesterday! It was an '06 Outback 2.5i in white. So if you need an STi (or want to get me one:), I can hook you up.

I thought today I'd share with you a recipe I made up for some great "faked" empanadas.

1 tube crescent rolls
1-2 cups pre-cooked or leftover chicken, cut into small pieces
1 cup black beans
1/2 cup of your favorite salsa
shredded cheese

Preheat your oven to 375.
Roll out the crescent rolls to their individual triangles.
Stretch the dough out with your hands a little bit to make the triangles a little larger.
Spoon some chicken, beans, salsa, and cheese onto each triangle.
Close each one up so that the filling is sealed.
Bake for 15-20 minutes, until golden.
Enjoy!
